Chocolate Rum Balls
1 c pecan pieces chopped quite fine
3/4 c unsweetened dried coconut (you can find online or in a health food store)
1 c. sucralose
2 T unsweetened double dutch processed cocoa powder
3 T heart healthy butter alternative
2 T rum
2 t. egg white powder (you can buy this online...needed because they are pasteurized)
2 T warm water
Preheat the oven to 350°F. If you toast your pecans first, you will increase their flavor. Toasting can happen in a skillet, in the oven, or in a microwave. Just make sure you watch carefully and pull when they just begin to brown. Cool then chop.
Then you….mix nuts with coconut, sucraluse, and cocoa. Melt your smarter "butter" and stir with the rum. Now it’s time to reconstitute the egg whites. Mix the powder with warm water and stir quickly (or put in a jar and shake vigorously) until they have dissolved and are frothy. Stir into the rum butter mix…and then add that to your dry ingredients.
Roll into small little balls. Leave out an hour or two to dry, then store in an airtight container. Enjoy!!
