Rustic “Chunky” Apple Cake

The really “cool” part of this cake is the frosting. There is none. Not in the traditional sense. You “frost” this cake with sautéed apples. So, it’s perishable. This isn’t a cake that I leave out on the counter. But you won’t have to worry about that. It will disappear quickly. Be artistic when you “frost” so the apples don’t look thrown on. This cake is not only beautiful, but delicious.

1 ½ c. low fat buttermilk
¾ c. nonfat yogurt
½ c. unsweetened applesauce
1 c. packed brown sugar+1 c. sucralose
½ c. egg substitutes
Mix all wet ingredients together then add:
1 tsp. baking powder
½ tsp. baking soda
1 ½ tsp. cinnamon
½ tsp. salt
2 tsp. vanilla

Stir in:
2 ½ c. flour

And finish with:
2 cups of apple chunks cut into ½” pieces (leave the skin on!)

Pour into two 8 or 9” baking dishes that have been either sprayed with a baking spray with flour or lined with parchment paper and greased with shortening or butter.

Bake 40 minutes at 350° or until pick comes out clean.

“Frost” with four large apples that have been cored, sliced thinly (¼”) and sautéed in heart healthy "butter" alternative with ¼ c. brown sugar. The sauté process takes about 10 minutes. Put half on the first layer and the remaining half on the top layer of the cake. Enjoy!
